Mama’s Rhubarb Crunch
Rhubarb season is here and it is one of our favorites. My mama’s rhubarb crunch is one dessert you don’t want to miss out on. Tart chunks of rhubarb sweetened with a sweet sauce and baked with a crisp oatmeal topping. Add a scoop of vanilla ice cream on top and you have yourself the perfect summer dessert.

shortening

Mama’s rhubarb crunch is one of my most favorite desserts. The ingredients are simple and the flavor is outstanding. Also, who doesn’t love a warm pie like dessert with vanilla ice cream. YUM!
Let’s get started. First off, preheat your oven to 350 degrees. Next, we will make the filling. Add rhubarb, sugar and flour and mix together. Dump it into a pie pan or a 9x9 square pan and spread it out. Set that aside while we make the crunch.
For the crunch, in a mixing bowl, add all of the dry ingredients together and make a hole in the middle. In another small mixing bowl, melt butter in the microwave for a few seconds and add in shortening. Whip together to get somewhat of a smooth consistency. (there will be clumps)
Next, pour butter and shortening mixture into the hole in the dry ingredients and mix everything together. This will be crumbly.
Grab your filling and sprinkle the crunch over top of the crust. Place in the oven for 35-45 minutes. (until the top is golden and the rhubarb is bubbling) When it is done, let it sit for a bit before cutting right into it. Serve with vanilla ice cream and enjoy!
Although this dessert is mostly enjoyed by adults. I don’t want this yummy recipe to get lost in time if it isn’t passed down to younger generations. Most recipes I see these days are made with strawberries and rhubarb. My Mama’s Rhubarb Crunch is equal parts sweet, tart and delicious and sure to please young eaters too, especially with the vanilla ice cream nearby!
