Snickerdoodle Apple Coddler
Snickerdoodle apple cobbler!! Where do I even begin. This recipe is plain old delicious. It is spiced with cinnamon, a delicious apple filling and the cookie crumble topping takes it over the top. Pair it with vanilla ice cream and you’ve got a dessert that will have people begging for more.
APPLE GOODNESS IN EVERY BITE.
When my friend Crystal, over at the Holland House and I were planning our catering event we were discussing that we wanted an easy dessert, that could bake in the oven and be ready once everyone had finished their main course. Bam – Cobbler! Cobblers are so easy to make. They are a classic American dessert and most always contain fruit. Some cobblers are encased in a pastry and others are topped with biscuits or streusels.
The best part of this snickerdoodle apple cobbler? I would say making and sampling the cookie dough, duh The cookie dough that is dropped on top creates a soft and slightly chewy crust. Side note about this dessert, I am not a fan of crunchy apples in cobblers, pies or crisps but these apples come out perfectly without having to cook them prior. Which means less steps, AMEN! Most of the ingredients should already be in your pantry. Follow along below!
INGREDIENTS
for the filling –
9 apples sliced (chopped)
sugar
flour
ground cinnamon
for the topping –
1 pouch of sugar cookie mix
butter
1 egg
sugar
ground cinnamon
optional – vanilla ice cream or whipped cream
LET’S MAKE SNICKERDOODLE APPLE COBBLER!
First off, preheat your oven to 350 degrees and we will start with the filling. In a medium sized bowl, add in your filling ingredients; sliced and chopped apples, sugar, flour and cinnamon. Mix together until everything is coated. Now, grease the bottom of your baking dish and place the filling ingredients in it, spread out evenly. Set that aside and get out another medium sized bowl. We will make the topping for this delicious snickerdoodle apple cobbler. For the topping, stir in cookie mix, butter and an egg until dough forms. Next, you will want to grab out an ice cream scoop and start scooping spoonful’s of the cookie dough on top of the filling. I used a round 2.5qt baking dish and began by making a circle with the cookie dough. Yes, you will still see some pieces of apples, that is okay! Now that we have that ready, get out a small bowl and place 5 tsp of sugar and 1/2 tsp of cinnamon together until blended and sprinkle on top.
LET THE OVEN WORK ITS MAGIC.
Time for it to go in the oven. Bake for 30-35 minutes. Make sure cookies are golden and the edges of the fruit are bubbly. Once it is done, let it cool 5-10 minutes.
Serve with vanilla ice cream and enjoy!
