Cheddar Potato and Sausage Soup

This delicious cheddar potato and sausage soup is incredibly cheesy, thick and decadent; your kids will ask for seconds or thirds. The only question I have about soup is, why is it better when it is warmed up the next day? Anyways, follow along below.

INGREDIENTS

  • olive oil

  • smoked sausage

  • onion

  • garlic

  • chicken broth

  • russet potatoes

  • celery

  • butter

  • flour

  • milk

  • cheddar cheese

  • salt & pepper

Soup Season is BACK

Kids love this cheddar potato and sausage soup. First up, heat the oil and add diced sausage. Cook until it is browned and transfer to a bowl. We will come back for this. Dice onion and add to your soup pot and cook them down until they turn translucent. Add in the garlic and cook for about a minute. Next up, add in the chicken broth, diced potatoes and chopped celery to the pot. Bring to a simmer and cook for about 12 minutes, until the potatoes can be smashed.

If you have picky kids, this is where the magic happens. Smash the potatoes in the pot, this way there aren’t any FOREIGN chunks floating in your soup :)

Grab another pot quick to whip up your cheese sauce. This goes quick so have all of the ingredients ready. Melt butter and add flour. Cook and whisk continuously until it turns a light golden color. Now, slowly add in the milk and continue to whisk. You don’t want any clumps. Once the mixture thickens and bubbles. remove the pot from the heat. Add in cheese slowly and whisk together. Pour cheese sauce into the soup and stir. Add salt and pepper as needed. Go back and get that sausage, mix it into the soup. Serve and enjoy!
