Mexican Tater Tot Hotdish
It’s HOTDISH season. If you’re from the midwest you know these rule every family get together. This Mexican Tater Tot Hotdish is one for the books bringing you all those delectable Mexican flavors. You will want to add this recipe to your fall family dinner menu.
INGREDIENTS
hamburger
green pepper
onion
taco seasoning
fiesta nacho cheese soup
corn
salsa
shredded cheddar cheese
tater tots
Hotdish or Casserole
Whether it is a hot dish or a casserole this meal is sure to please everyone at your table. Let’s get started. First, preheat your oven to 350 degrees. Next, brown the hamburger. Add in pepper, onion and taco seasoning and mix together.. Spread the meat mixture in the bottom of a 9x9 pan or 4 or 5 quart dutch oven. Set that aside for a minute. In a mixing bowl, combine soup, salsa and corn. Pour this overtop of the meat mixture. Top with shredded cheddar cheese and the final layer will be tater tots. Place enough tater tots on top to cover the whole dish. Bake for 1 hour.
One little trick I always do, is save a few tator tots and air fry them for extra crispness to put on top when the hotdish is done in the oven. It gives it a little extra crunch.
When it is done in the oven, take it out, scoop yourself a large serving and enjoy! One of the best parts about this Mexican Tater Tot Hotdish is that there are secret veggies placed in the recipe that your kids won’t even notice they are eating. Mom WIN!
