Chicken and Gnocchi Skillet

This recipe is truly a one pan wonder that is family friendly. First up, cook your gnocchi according to pkg instructions and set aside. Next, season chicken with an AP rub and paprika. Melt 2 Tbsp of butter in a large skillet and add chicken. Cooking for about 10 minutes per side, until golden brown. Transfer chicken to a separate plate and set aside. For the chicken, you can use chicken breasts, thighs or pre cut strips; I love using Perdue short cuts for convenience.
Melt the remaining butter in the skillet. Add in garlic, Italian seasoning and onion. Saute onions until they are translucent and tender (about 3 minutes). Whisk in chicken broth. Gradually pour in the cream, whisking as you pour. Add in shredded mozzarella and hot sauce and continue whisking until combined. The sauce should start to thicken. Stir in cooked gnocchi and spinach. Place chicken back into the pan and let it simmer for 2 minutes. Top with crushed red pepper and parmesan.
