We are kicking off a new series this week! Welcome to Busy Night Bites. These recipes are all about making weeknights easier with quick, family-friendly meals that everyone will love.

INGREDIENTS

  • chicken breasts

  • green beans

  • rice

  • milk

  • cream of mushroom soup

  • nonstick cooking spray

  • olive oil

  • Killer Hogs AP rub (salt, pepper, garlic)

  • Killer Hogs Hot BBQ rub

LET’S GET TO COOKING!

First, you can preheat your oven to 350 degrees. Spray a 9×13 baking dish with nonstick cooking spray and set aside. Place green beans, rice, cream of mushroom soup and milk into the baking dish and mix until it is evenly combined. It will appear soupy! Now go ahead and drizzle some olive oil and seasoning on your chicken breasts, we prefer and love to use the Killer Hogs AP and Hot BBQ rub(linked below). Once the chicken is ready to go, place each breast on top of the mixture evenly throughout the dish. Cover with tin foil.

Pop the chicken and rice bake into the oven. While you wait, go ahead and enjoy some time outside with your kiddos and come back in an hour. When the chicken reaches an internal temp of 165 degrees(about 1 hour at 350 degrees), take the baking dish out of the oven and serve it up. It’s that EASY. This chicken and rice bake can be served up on a summer night and it is easy enough to make on a school night.
