Chicken Tortilla Soup

Creamy and delicious chicken tortilla soup that is perfectly spiced, satisfying and made in one pot, just in time for soup season. This recipe is so good and might be even better warmed up the next day….you can make this soup on the stove or in a crock pot. Follow along below!

INGREDIENTS

  • butter

  • onion

  • garlic

  • tomato paste

  • corn

  • rotel

  • chicken broth

  • shredded chicken

  • chili powder

  • paprika

  • hot sauce

  • cheddar cheese

  • heavy cream

  • cream cheese

  • garnish - cilantro, diced avocado, sour cream, shredded cheese, wonton strips or frito's

Soup Season

One pot chicken tortilla soup, let’s go! First up, in a large soup pot, heat up butter and saute onions for about 3 minutes, until they are translucent. Add in the garlic and saute another minute. Next, add in remaining ingredients to your pot EXCEPT for cheddar cheese, heavy cream and cream cheese. Cook the soup slowly (20 minutes-ish) to prevent your chicken from drying out and let it come to a bubble, partially covered. Once it is boiling, reduce the heat to low. Now is the time we add in shredded cheese, cream cheese and heavy cream. Stir until smooth, creamy and incorporated.

Grab out some soup bowls, fill them up and garnish with whichever toppings you prefer. A few ideas; cilantro, diced avocado, sour cream, shredded cheese, wonton strips or frito's chips.
