Weeknight Chicken Stir Fry

The best weeknight chicken stir fry you’ll ever make. If you have tried any of our recipes, you know grilling is one of our favorite ways to cook. Not only is this recipe delicious but it is also quick. We love easy weeknight meals now that hockey is filling up our calendars.

INGREDIENTS

  • 2lbs chicken drummies + thighs

  • AP rub

  • olive oil

  • lemon juice

  • frozen vegetables

  • coco aminos

  • minute rice

  • additional toppings - white onion & sesame seeds

Fire up that grill.

First thing, marinate your chicken. Toss chicken drummies and thighs in a ziploc bag with olive oil, lemon juice and some sort of an AP rub. Let that marinate for 4-8 hours in the fridge.

Now go ahead and fire up that grill. We are going to grill the chicken at 300-350 degrees with direct heat. Place chicken on the grill and consistently turn the meat, watching for flare ups. You don’t want to burn your chicken! Keep grilling for about 30 minutes. Once your chicken reaches an internal temp of 165 degrees, take off the grill and cover with tinfoil while we prep all the other ingredients. Heat up your frozen vegetable mix, dump into a bowl and set aside. Heat up the rice as needed and set aside Now, cut the chicken into small cubes.

Add all of the ingredients together, top with green onion and sesame seed. Drizzle on some coco aminos and enjoy! This meal works great for meal prepping for the week. The chicken is great on salad, in soups or used for chicken tacos — Crockpot Chicken Tacos
