Crockpot Chicken Tacos

A very easy crockpot chicken taco recipe made with chicken breasts that is perfect for tacos or burrito bowls. The key ingredient in these chicken tacos is Rotel. Most people think that adding Rotel will submerge the chicken in boiling liquid and dry it out. Well, I am here to tell you.. that is FALSE. This crockpot chicken taco recipe will have you coming back for more. These chicken tacos are moist, flavorful and delicious!

You only need a handful of ingredients to build the perfect crockpot chicken tacos. All you do is throw everything in the crockpot and continue on with your day. Come back in an hour or 2 and supper will be ready!  You can use this chicken in soft shells, hard shells, burrito bowls, taco salads or rice bowls.

INGREDIENTS

  • 3-4 chicken breasts

  • Rotel

  • Taco seasoning

  • Taco shells, tortillas, shredded lettuce, cheese, sour cream, avocados, cilantro lime rice, Yellowbird Blue Agave Sriracha; etc.

The best part about this recipe? IT IS SO EASY. First, place your chicken in the crockpot. (High 2 hours, Low 3-4 hours) Pour the Rotel over the top of the chicken. Make sure you drain the Rotel first to avoid excess liquid. Sprinkle on your taco seasoning. Cover the chicken and wave goodbye. It is that easy. Crazy right? No one has time for a hundred ingredients or washing 75 pans every night. Once the chicken is done (165 degrees internal temp), shred it how you prefer to. You can use a hand mixer in the crockpot or just use some forks.

We always pair our Mexican food with cilantro lime rice. All you need is 1 bag of white or brown rice (we like the microwavable, ready in 90 seconds) ; 1 tbsp chopped cilantro and the juice of 1 whole lime. Mix it all together, add a little salt and pepper and you are set. Now, back to the crockpot chicken tacos…. once it is shredded, it is time to build the taco of your dreams.

Our daughters prefer a chicken & cheese quesadilla, where I like to make myself a hard shell with cheese, lettuce, sour cream, avocado, and the Yellowbird Blue Agave Sriracha.
