Sweet Potato and Black Bean Burrito Bowl
Where are all of my vegetarians at!? This meal is for YOU! These sweet potato and black bean burrito bowls are packed with flavor. You might go crazy over these. The best part? You can make them however you want! Don’t let the ingredients list scare you, it is mostly seasonings that you may already have in your pantry. Let’s get started.
INGREDIENTS
For the bowl:
2 large sweet potatoes
1 red bell pepper
1 green bell pepper
1/2 yellow onion
avocado oil
chili powder
Killer Hogs AP Rub
cayenne pepper
cumin
paprika
Jasmine Ready Rice
1 lime
cilantro
1 can black beans
Cotija cheese for topping
Secret Sauce:
cashews
Adobo sauce
garlic
chili powder
paprika
cumin
salt
red pepper flakes
water
1 lime
THE PERFECT WEEKNIGHT VEGETARIAN BURRITO BOWL.
First thing first, in the secret sauce it calls for Adobo sauce. Adobo sauce is available via canned Chipotle Peppers. You will need to purchase one can to grab a little sauce out of. First, preheat your oven to 425 degrees. Rinse, peel and cube the sweet potatoes, place them in a large mixing bowl. Thinly slice your peppers and onion and add to the sweet potatoes. Drizzle with avocado oil, add in all the seasonings (chili powder, Killer Hogs AP Rub, cayenne pepper, cumin and paprika) and toss evenly to coat. Place the vegetables on a pan and bake for about 20 minutes. Be sure to give them a little shake, halfway through. You will want the sweet potatoes to be soft.

While the vegetables are roasting, let’s make that secret sauce. Add all of the ingredients to a blender. Blend it all together to combine and set aside. The vegetables are almost done, place your ready rice in the microwave and cook for 90 seconds. Take it out and add it to a large bowl, add some juice from a lime, a little cilantro and mix together. To assemble the bowls…. add rice and top with black beans, sweet potatoes, peppers and onions. Garnish with cilantro, cotija cheese and drizzle the secret sauce over top.
You can add avocado to this as well. If you don’t want to make the secret sauce, this bowl is so flavorful without it. These sweet potato and black bean burrito bowls are great for meal prep recipes and packed with healthy ingredients.
