Oven Fried Buttermilk Chicken

We have been on a chicken kick lately and fried chicken might be one of my weaknesses. The best part about this recipe is that you can use any type of chicken, whether that’s chicken breast, chicken thighs or chicken drummies; this recipe works on them all!

This chicken is soaked in buttermilk, which makes it moist and juicy on the inside and topped with panko bread crumbs and corn flakes to make it extra crispy on the outside.

INGREDIENTS

  • Chicken thighs

  • Cluckalicious - poultry seasoning

  • Avocado oil

  • Buttermilk

  • Lemon juice

  • AP Rub - all purpose rub = salt, pepper, garlic

  • Paprika

  • Chili powder

  • Parsley

  • Panko bread crumbs

  • Crushed corn flakes

  • Parmesan cheese

Better than take-out

First thing, you NEED to marinate this chicken in buttermilk for at least 6 hours or even better, overnight. It’s what makes it delicious, trust us. Season your chicken with avocado oil, cluckalicious, paprika and an all purpose rub in a large bowl. Add in the buttermilk and lemon juice and make sure everything is covered. Then place in the fridge to marinate.

Preheat your oven to 400 degrees and spray a baking sheet with cooking oil.  When the chicken is ready to rock, make your breading. For the breading you will add panko bread crumbs and crushed corn flakes to a medium sized mixing bowl. Add in parmesan cheese, paprika, chili powder, cluckalicuous, AP rub and parsley. Give it a good stir so everything is mixed evenly.

Take your chicken out and dip into the breading mixture, cover both sides generously and place on baking sheet. Spray the tops of the chicken with cooking oil to prevent burning.  Bake for 45 minutes, until the chicken is golden and has an internal temp of 165 degrees.
