Pineapple Chicken and Rice Bowls
These pineapple chicken and rice bowls are made with an easy sauce, grilled pineapple, chicken and rice. A delicious healthy dinner or lunch that can also be made ahead for meal prep!
INGREDIENTS
chicken breasts
pineapple
white or brown rice
Cluckalicious seasoning or poultry seasoning
Buffalo Wild Wings asian zing or BBQ sauce
Bowls are so versatile
Bowls are one of my favorite meals to start the week off. Of course they taste great the night you make them but then I like to prep a few for other meals throughout the week. You can either grill the chicken or cook it in the oven.
1, 2, 3… lets go! First up, preheat your oven to 350 degrees. First, rub down your chicken breasts with some oil and cover in seasoning. We chose to use one of our favorites, Cluckalicious. Once the chicken is ready, place it in the oven for 30-40 minutes. Internal temp should be 165 degrees when done. Right before the chicken is done or when the chicken is done. Start making the rice and grilling the pineapple.
Heat up a cast iron skillet over medium/high heat. Once it is ready, grill pineapple for about 3 minutes a side. Set them aside when done. Now, I love to use 90 second rice that goes right in the microwave because it is quick and easy.
When everything is ready to go it is time to build your bowl. Add chicken, some rice, pineapple and whatever else you may like. Top with your favorite dressing, mix together and enjoy. My husband topped his bowl with Buffalo Wild Wings Asian Zing sauce and sprinkled on sesame seeds. I drizzled some BBQ sauce on mine and it sure was delicious.
These pineapple chicken and rice bowls can be easily customizable depending on your ingredients and preferred taste.
