Pot Roast
Fall is officially here! Feast your eyes on this pot roast recipe. Crave-worthy elements that make pot roast a family favorite, including melt-in-your-mouth meat, potatoes, carrots, and a rich, warming broth.
INGREDIENTS
3-4lb roast
flour
dried thyme
chili powder
onion powder
AP Rub
carrots
celery
onion
potatoes
garlic
beef broth
rosemary sprig

One of my favorite parts about pot roast is that it cooks in a crock pot all day and fills your home with the best smelling aromas. Here we go. First up, pat your roast dry and season it with an all purpose rub, onion powder, chili powder and dried thyme. Next, cover both sides of the roast with flour. In a medium skillet, heat up olive oil and add in roast; searing all sides.
Now, transfer the roast to your crockpot. Chop carrots, celery and onion and toss into crockpot. Slice or cube potatoes and add to crockpot. Finally add in garlic and beef broth. Give everything a stir. If you want to add a little rosemary twig, go ahead. Cover and cook on low for 6 hours or high for 3 hours until the pot roast is tender.
Serve with dinner rolls and enjoy!
