BBQ Chicken Kabobs

BBQ Chicken Kabobs only require 5 ingredients, are easy to make and they taste like summer on a stick. These delicious kabobs pair great with a bed of rice or even a simple summer salad. The thing with these kabobs is that the possibilities are endless and summertime makes it easier to provide the freshest produce to make these colorful. 

A few reminders before we get to building them. Make sure you have a great barbecue sauce to make that sticky caramelized finish; we prefer Black Dog barbecue sauce. Also, if you are using wooden skewers, soak them first in water so they don’t burn.

    Okay ladies & gentlemen.. start your engines, or your grill. First off, cut chicken and bacon into 1inch cubes, as well as your pineapple and onion. If you don’t like chicken, you can always swap it for shrimp or steak, you really can put anything on a stick and call it a kabob. Next, you are going to wrap your bacon around the chicken and thread it onto the skewer. Place your pineapple and onion in between the meat, folded in half and continue doing this until all of your skewers are ready. I seasoned mine with my most favorite Killer Hogs AP rub (salt, pepper, garlic) and their hot bbq rub.

GET READY TO GRILL

Now it is time to pop them on the grill for about 30 min with indirect heat. We love using our green egg for almost everything. I have noticed that this grill does something magical to vegetables and miraculously your kids will eat them! However, if you don’t have a green egg, these will work on any grill as long as you are using indirect heat. Alright, back to the recipe.

Halfway through cooking the kabobs, thoroughly coat them with BBQ sauce and continue cooking until they are done. Total grilling time should take about 30 minutes and the chicken should always be cooked to 165 degrees. Once you get them off the grill, slather them again with more BBQ sauce and they are ready to devour. You can either pull them off the skewer one by one, or place all the pieces in a large bowl and serve. The caramelization of the barbecue sauce gives you one last punch of flavor.
