BLT Pasta Salad

Labor Day weekend seems to always be the last hurrah for summer around here. If you know us, we love grilling! This BLT pasta salad is the perfect addition to your barbeque this weekend or anytime. Anyone else kiddos just pick the noodles out of pasta salad or is it just my 2hungrydaughters? Anyways, pair it with my barbeque grilled chicken for the perfect end of summer meal.

The best part about this BLT pasta salad? The bacon of course, I love cooking bacon in the oven. It makes it so crunchy and flavorful. Sometimes, I eat a few pieces before chopping it up for the salad. You can’t blame me! 

LET’S GET TO MAKING THE BLT PASTA SALAD…

First off, set your oven to 350 degrees for the bacon. I love to cover my baking sheet with a few layers of tin foil to prevent the bacon grease from ruining it. Place bacon on the tin foil and pop it in the oven.  While the bacon cooks, fill a pot with water and bring to a boil. Cook pasta according to package instructions. Drain & rinse with cold water and set aside. Once the bacon is done & cooked, let it drain on paper towels. Then chop it all up into little bits. Wash your tomatoes and romaine lettuce. Slice the tomatoes in half and chop up the romaine & set them aside. Grab out some mayo, barbecue sauce and pepper.  

Now it is time to build the BLT pasta salad. Place tomatoes, romaine & bacon in a large bowl with the pasta & mix it all around. Now add in your barbecue sauce and mayo, mix all of it together until it is fully saturated. Serve this immediately or place it in the fridge & take it out prior to serving later. Side note, you can also add in chopped onion or chunks of avocado!

Pasta salad is such an easy dish to whip together for any kind of event or meal. This recipe is so easy and delicious. I love the crisp bacon in it. This pasta salad holds perfectly for leftovers the next day and if it is dry, just add in some more mayo or barbecue sauce.
