Jill’s Roasted Veggies

A side dish that kids love. Jill’s roasted veggies are oven baked to crisp perfection. These veggies can side with just about any entree and can be prepped In minutes.

INGREDIENTS

  • frozen or fresh mixed veggies

  • olive oil

  • Italian seasoning

  • lemon juice

  • salt

  • pepper

  • garlic

 Roasted Veggies

Roasted veggies are lightly crisp on the outside, tender and caramelized on the inside. The oven brings out their natural sweetness, making them appealing to those picky eaters. Lets get started. We like to save time so pre chopped or frozen vegetables are our favorite to use. We used broccoli, cauliflower, carrots but you could also use peppers, green beans, asparagus, etc.

First step, preheat your oven to 400 degrees. In a medium sized mixing bowl, add vegetables and olive oil together and mix until they are saturated. Next up, add the juice of one lemon to the veggies as well as all of the seasoning. Toss everything together to coat. Finally, add a little oil to your baking sheet and drop the veggies on there. Make sure to spread them out so they don’t overcrowd. Bake in the oven for 25-30 minutes, making sure to give it a shake and rotate throughout.

Take them out and enjoy. Jill’s roasted veggies are so good you will be eating them off the pan.
