Summertime is finally here! When I asked you all a few months ago what kinds of recipes you would like to see, Pasta Salad was a popular response. So here we are with yet another delicious side for grilling season. Mexican Street Corn Pasta Salad is loaded with corn, Cotija cheese and an extremely delicious and tangy dressing. This Mexican Street Corn Pasta Salad is quick and easy to throw together and makes a great side for grilling or Taco night.

INGREDIENTS

  • rotini or elbow noodles

  • sour cream

  • mayo

  • chili powder

  • garlic powder

  • cayenne pepper

  • lime juice

  • salt and pepper to taste

  • 1/2 can of corn, charred

  • Cotija cheese

  • cilantro (optional)

 Up your side dish game with this Mexican Street Corn Pasta Salad

Pasta Salad is always a hit in the summer in our house, my girls mostly just eat the noodles but atleast they are trying new flavors! That is what I am here for. Let’s get started. Cook pasta according to package instructions and set aside. Run under cold water to prevent sticking. In a medium sized mixing bowl, whisk together sour cream, mayo, chili powder, garlic powder, cayenne pepper, lime juice and salt and pepper. Set dressing aside once it is ready. You can either throw the corn in as is from the can or give it a little char on the stove or grill. Once it is ready, we will prepare the dish. In a large serving bowl, add noodles, dressing, and corn together and mix. Make sure everything is completely covered in the dressing.

Top with Cotija cheese and clilantro. Add a few cut up limes for garnish and beauty.

Serve and enjoy!

This recipe can also be made ahead just place all ingredients into the fridge and mix the pasta salad together when it is time to serve.
