Spinach Queso
“Mom, I want chips and sauce.” A common request in our house. If you’ve had Acapulco’s queso you know it is the best around. Instead of ordering it for take out all the time, I decided to make my own at home that my family can enjoy. This spinach queso has only 4 ingredients and is creamy and flavorful. Don’t quote me but it just might be better than Acapulco’s.
We make this often and I am so excited to be sharing it with you! The texture and flavor is out of this world and it tastes great with vegetables! WHAT!? Say no more. Not only is this great for Taco Tuesday but its easy enough to throw in the crock pot and bring to a friends house. You know Superbowl Sunday is just around the corner.
INGREDIENTS
Spinach
Rotel
Velveeta queso blanco
cream cheese
LET’S GET TO MAKING THE SPINACH QUESO
Start by turning on your crock pot to low or high heat. This dip can be ready in an hour or 2 hours, whichever you prefer. Now, start chopping the spinach. I prefer cutting the stems off first. Toss your spinach into the crockpot. Next, drain the liquid out of the Rotel and dump it in. Cube the Velveeta and cream cheese and place them in the crock pot. Stir everything together and let it cook. Keep an eye on the cheese to prevent it from burning and stir every so often.
All you have to do now is pop the lid on and cook on low for 2 hours and high for 1 hour. You can add in pre cooked ground beef to this recipe if you would like and as far as the Rotel goes, the sky is the limit. They have so many flavors. My favorite is the Hot Rotel, that gives it a little kick but also makes this queso suitable for kids. Get your chips ready to dive into this delicious spinach queso. Serve with tortilla chips & celery sticks.
