Banana Bread

“mmmm, mom that smells delicious” V, every single time I make this.

    Banana bread reminds me of my mom. She always made it for us growing up and continues to do so. Of course, every single time she would make it, hers would come out perfectly. While I on the other hand, have yet to have made the perfect loaf. Practice makes perfect I guess.

    From day 1, my husband Pat actually thought my mom bought hers from the grocery store and wrapped it in tinfoil. How funny is that? Maybe it is because it is so soft and tender with just enough sweetness. I am telling you that this banana bread is sure to please.

LET’S GET STARTED MAKING BANANA BREAD

    So, where to begin? Here we go. Preheat your oven to 315/325. Cream shortening and sugar together, add in your eggs and flour with the soda sifted in. Mix that all together and throw in your bananas and mix well. If your kiddos are chocolate freaks, like mine, throw in a handful of chocolate chips. We love the mini morsels!

    After that, grab yourself a loaf pan and spray with nonstick spray. Our favorite non-stick spray is avocado oil, we use it for everything. Next up, pour your batter into the loaf pan, spread evenly. Bake in a slow oven for an hour, + or -; depending on your oven, I like the outside crispy and the inside fluffy.

    When your timer goes off and it looks ready, take it out and let it cool completely before storing. I wrap mine in tinfoil to keep it fresh. I recommend serving it slightly warm and slathering it with a smear of butter. Make a loaf or two for yourself or for a friend. This holds up perfectly in the freezer too! 

    Having frozen bananas on hand is my saving grace. You never know when you might have some unexpected guests. This recipe is so easy you can whip it up the night before! Everyone loves this recipe and the muffins are convenient for your kids to eat in the car, on the way to school.
