Muffin Tin Eggs
Muffin tin eggs are such a healthy and easy breakfast idea that you can make ahead for when you are on the go! These convenient egg cups won’t leave anyone disappointed, kids included. Everything you love in an omelet is smashed into a little healthy egg muffin. These are great on their own but also taste delicious on an English muffin, as a sandwich. These muffin tin eggs are so easy to make and you will never get bored of them because there are so many variations you can try. The best part is you can make these ahead of time to have in the fridge for a quick breakfast or snack. Which means no more excuses to skip having a healthy breakfast. Now let’s get started with the simple ingredients you probably already have in your pantry and fridge.
LETS MAKE THE MUFFIN TIN EGGS
You will need a muffin tin pan for this recipe, preferably a 12 cup tray. This is one of the easiest recipes I have done! Just combine the ingredients and bake in the oven but first off, we will preheat our oven to 375 degrees. Then we will spray each muffin tin with avocado oil. (I like to take a paper towel to wipe out the excess oil in each cup) Side note, I use avocado oil for most of our cooking and baking, you can use whatever you want. Now is the time to cook up your pork sausage and set that aside when it’s all browned. Grab a skillet and throw on some avocado oil, then add in the peppers, onions and scallions until they are soft. After that, drop in your seasonings and stir it all up. MMMmmm, you smell that? Yum! Grab a medium sized measuring cup and mix your eggs in it, beat them to a liquid consistency and let them be.
Mix your pork sausage, cheese, milk and vegetables together in a separate bowl. Now you can start to fill your muffin tins. Fill each tin with ½ of the meat/veggie/cheese mixture and top them with the eggs. Cook these guys for 15-17 minutes. Be sure to take them out of the muffin tin and let them cool on a cooling rack to prevent any sweating. After that, pop one in your mouth and enjoy! I love these for rushing off to church or running to preschool drop off. One tip here, do not use muffin tin liners, I found that they “deflate” the muffins when you use them.
These muffin tin eggs last up to 5 days in an airtight container, which is perfect for Monday – Friday.. if they last that long.
