Chocolate Dipped Peppermint Cookies
It’s National Cookie Day!!!! WOOHOOOOO We are so excited to share our chocolate dipped peppermint cookies.
Decadent chocolate cookies finished with a layer of white chocolate and topped with peppermint bits. These cookies are likely to become a new holiday tradition in your family. Lets get started.
INGREDIENTS
flour
baking soda
salt
cocoa powder
butter
sugar
brown sugar
vanilla extract
eggs
vanilla candy coating
peppermint bits
The best ever chocolate cookies
I am heading to a cookie exchange and there is no better day to share our delicious chocolate dipped peppermint cookies with you. First up, preheat your oven to 350 degrees and line some baking sheets with parchment paper. The best part about using parchment paper = ZERO clean up, with pans atleast :)
In a medium sized bowl, mix together flour, soda, salt and cocoa powder. In a stand mixer cream butter and sugars. Add in your eggs and vanilla to the stand mixer. Now, slowly add in your flour mixture. For real, SLOWLY or you will have a chocolate powder storm. Once the dough is formed, scoop out with hands and shape into little balls. About the size of a quarter.
Next, flatten the cookies with the back of a spoon and place in the oven for 8-9 minutes. When the buzzer dings, take the cookies out (they will look under-baked) and let them cool on the parchment paper.
Finally, warm up the vanilla candy coating in 30 second increments until melted. Dip half of the cookie in the coating and top with peppermint bits. Let them cool. Serve & enjoy!
