Healthier Special K Bars

My sister has been making these bars for years and every time we have a family gathering, they are the #1 request. My family could eat the whole pan in one sitting. You know the 2hungrydaughters love chocolate.

Whether it’s lake season or a family get together, these special k bars are the perfect, no-bake, sweet treat. You can get these bars made in no time without an oven!  We gave them a little upgrade. Follow along below.

INGREDIENTS

  • butter

  • sugar

  • honey

  • peanut butter

  • special k cereal

  • butterscotch morsels

  • milk chocolate chip morsels

HOW TO MAKE A SOMEWHAT HEALTHIER SPECIAL K BAR

These no-bake bars are a staple at most get togethers. They are chewy, chocolatey and delicious. Recently, we decided to give them a little UPGRADE. Bye Bye Corn Syrup, Hello Honey. I am telling you, the honey made these even more soft and chewy. Let’s get started!

Place your cereal in a large bowl and set aside. Butter or line with parchment paper a 9×13 pan and set that aside. In a medium sauce pan, mix together sugar and honey. Bring to a boil and remove from the heat. Add in the peanut butter and mix well. Pour the mix over the cereal and fold in to coat it. Using an oiled spatula, pat down into your 9×13 pan. Let that sit while we whip up the topping.

Using that same sauce pan, melt the butterscotch and chocolate chip morsels together. Pour over top of the bars and smooth it out with a flat spatula or knife. Let the bars cool before cutting. If your 9×13 pan comes with a cover, that is perfect for storing these bars otherwise place them in an airtight storage container.
