First up, wash and chop your potatoes into small pieces. Heat up a pan over medium heat and add olive oil. Add potatoes to the hot oil and season generously with AP Rub and add a little water. Stirring often until the potatoes begin to soften. Once the potatoes are soft, add them to your baking dish. In that same pan, add your ground beef, chopped onions and season with AP Rub. Once your meat is cooked, add mustard and mix together until combined. Add your beef mixture to the potatoes in the baking dish. Mix all together and top with shredded cheddar cheese.
Cover with foil and bake for 15-20 minutes, until the cheese has melted.
While this bakes, lets whip up the delicious Big Mac Sauce for the Big Mac Casserole. In a small mixing bowl, add mayo, ketchup, pickle juice and chopped pickles. Mix everything together and place in the fridge until it is time to use it.
Once it is done, take it out, drizzle the Big Mac Sauce over top and add shredded lettuce, tomatoes and pickle chips. Grab some bowls, dive in and enjoy!
This Big Mac Casserole is delicious, on the table in under 30 minutes and loaded with all the flavors you love.
