Broccoli Cheese Soup
I don’t know about you guys but these single digit temps got me feeling freezing. This broccoli cheese soup is comfort food at its best and is sure to warm you up. This soup is a kids favorite because of it’s creamy texture and cheesy flavor, and loved by parents because it’s secretly loaded with a ton of nutritious veggies.

INGREDIENTS
butter
onion
garlic
flour
half and half
chicken broth
broccoli
carrots
cheddar cheese
salt
pepper
paprika
chili powder

SOUP, YEAH!
First up, you are going to caramelize your onions in a large pot with the butter for about 3-5 minutes. Now, add in your garlic and sprinkle in the flour. MMmm, smells great. Once the flour is a golden color, it is time to add in the chicken stock and half and half. Stir and bring this all to a boil. Next up, add in your broccoli and shredded carrot. Make sure that your broccoli is finely chopped. Simmer on low heat for 10-15 minutes, or until the vegetables are soft. I trapped the heat for the last 5 minutes to really soften those veggies.
Finally, add in your cheese and seasonings. I highly suggest using freshly shredded cheddar cheese, it melts way better than bagged shredded cheese. Stir until it is creamy and pour yourself a bowl! You can top with fresh cheese & scallions. We paired ours with oyster crackers and a freshly baked baguette.
