Honey and Lemon Baked Salmon

Hello meatless Mondays. This easy & flavorful honey and lemon baked salmon makes for a delicious protein packed dinner. Pair with some rice and you’ve got the perfect weeknight meal. I could eat salmon every night of the week, I love seafood. Most people are looking to start the new year off with some healthy habits. Why not try this honey and lemon baked salmon as one of your first recipes!

HEART HEALTHY SALMON.

This salmon is so good, your kids will love it. I make our girls eat everything, there is no way I am making 2 different suppers every night. So, they usually always eat what we eat. You can pair this honey and lemon baked salmon with pesto pasta, creamy rice or a hearty salad. 

INGREDIENTS

  • 2 lemons

  • 1 large salmon filet

  • 5 tbsp butter, melted

  • 3 tbsp honey

  • 3 cloves of garlic, minced

  • 1 tsp thyme

  • 1 tsp dried oregano

  • salt & pepper to taste

  • fresh parsley for garnish

  • tin foil

  • non stick cooking spray

  • whatever side dish you like

LET’S MAKE HONEY AND LEMON BAKED SALMON!

It is time to start cooking. So let’s go! First off, line a small baking sheet with tin foil and spray it with non stick cooking spray. Preheat your oven to 350 degrees. Next, thinly slice your lemons and place in the center of your tray in a line. (the salmon will lay on top of this layer) With a filet knife, trim all of the bones from your salmon. The salmon I am used was fresh from Alaska and had quite a few bones in it. 

Once the salmon is trimmed and ready to go, you can season it with a little salt and pepper, on both sides. Now place your salmon on top of the lemon slices. Time for the marinade. In a medium mixing bowl, add in butter, honey, garlic, thyme and oregano. Mix it all together and pour over top of your salmon. You can make a little rim with the tin foil around the salmon to prevent the marinade from going all over the baking tray.

Finally, bake the salmon for 20-25 minutes or until it reaches an internal temp of 145 degrees. For the last couple of minutes, broil your salmon to give it a little crispness. Garnish with parsley and serve with rice and enjoy! The marinade on this honey and lemon baked salmon is delicious. The best part is that this recipe is quick and easy. Try it this week!
