Honey Dijon Chicken Salad

For many families, the best recipes in summer times are salads because they are so easy, fresh and healthy. Per my husband this honey dijon chicken salad is a 12/10, for real. The chicken is tender and juicy, placed on a bed of lettuce paired with fresh strawberries, avocado, crispy bacon and corn. If you are looking for a quick summer salad tossed in a delicious homemade dressing, this is it!

INGREDIENTS

  • dijon mustard

  • honey mustard

  • avocado oil

  • honey

  • white vinegar

  • green onions

  • salt & pepper to taste

  • chicken thighs

  • bacon

  • avocado

  • strawberries

  • corn

  • romaine lettuce

HOW TO MAKE HONEY DIJON CHICKEN SALAD

First up, this salad requires a little grilling or you can toss the chicken in the air fryer. Whatever works! In a small bowl, mix together honey mustard, dijon mustard, avocado oil, honey, white vinegar, green onions and a little salt and pepper. Once the dressing is ready, set part of it aside to use later on the salad. Place the other part of the dressing in a large Ziploc bag with the chicken thighs and marinate for at least 2 hours in the fridge. 

Now it is go time! Fire up the grill to medium heat, take out the chicken, place the thighs on the grill and toss the Ziploc bag in the garbage. While grilling the chicken, make sure to turn it occasionally and cook until the chicken reaches an internal temperature of 165 degrees. This will take about 10-15 minutes.

In a large salad bowl, combine romaine lettuce, sliced strawberries, bacon pieces, avocado and corn. I used leftover bacon from breakfast but you can either make fresh bacon in the oven or toss ready to eat bacon in the microwave. If you’re cooking bacon in the oven, preheat to 400 degrees, line a baking sheet with 2 layers of tinfoil and cook for 25-30 minutes. I placed our bacon in a tinfoil boat and warmed it up on the grill next to the chicken.

When the chicken is ready, chop it up and top the salad with the chicken. Pour over the saved honey dijon dressing and gently toss to combine. Grab some bowls and serve.
