Zucchini Noodles with Turkey Meatballs

A nourishing one pan meal that is gluten-free, paleo, low-carb and keto-friendly. Oh, not to mention a meal your whole family will enjoy. This zucchini noodles and turkey meatballs dish is loaded with flavor. Don’t get me wrong, we love carbs but sometimes we like to take a healthier approach to supper and this meal is just that!

INGREDIENTS

  • ground turkey

  • mozzarella

  • butter

  • garlic

  • Italian seasoning

  • crushed red pepper flakes

  • beef broth

  • salt and pepper

  • cilantro

  • zucchini noodles – frozen or fresh

  • lemon juice

  • Sriracha

AN EASY WEEKNIGHT FAMILY MEAL.

First, we will make the meatballs. In a large mixing bowl, add in ground turkey, mozzarella, garlic, Italian seasoning, crushed red pepper flakes, cilantro and beef broth. Mix everything together and form meatballs. Make your meatballs smaller than a golf ball, or if you have a food scale; 30 grams for each meatball. This will yield 15-18 meatballs. 

Once the meatballs are ready, in a medium sized skillet melt butter over medium-low heat. Fry up your turkey meatballs on all sides until they are brown and cooked through. This will take about 10-15 minutes with a final internal temperature of 165 degrees. Set the meatballs aside on a plate. In the same skillet, melt more butter while adding in garlic, beef broth, lemon juice, Sriracha, mozzarella cheese, cilantro, Italian seasoning and crushed red pepper flakes. Add in the zucchini noodles, stirring often and cooking for 5-7 minutes.

Once the zucchini noodles are done, add in the meatballs to warm them up a bit. Serve immediately and enjoy!

A FEW NOTES….

If you prefer less heat/spice, you don’t have to add crushed red pepper flakes.

If you want to meal prep, these turkey meatballs are great for that.

These meatballs tend to get dry because turkey is dry but the flavor is out of this world.

Cook the turkey meatballs on medium to low heat to avoid frying the outside and undercooking the inside.

We used frozen zucchini spirals, which look like little nests. They cook easily – just keep stirring!
