LBs Crock Pot Carnitas
Tender and juicy pork carnitas, made in the crockpot and perfect for tacos, nachos and quesadillas. Carnitas is a family favorite when it comes to crock pot recipes and Mexican cuisine. You can’t beat this recipe. Inspired by one of my dearest friends LB, she is quite the cook. Lets get to cooking.
INGREDIENTS
1 1/2lbs Pork Tenderloin
Yardbird BBQ Rub
AP Rub (salt, pepper, garlic)
1 12oz Jar Salsa Verde
1 cup water
Hard Shells
Soft Shells
Lettuce
Cotija Cheese
Salsa/Taco Sauce
Carnitaaaaass!
First up, line your crockpot. This saves time and it is one less dish to clean! Moms like that. Place tenderloin into crockpot. Graciously cover both sides in Yardbird & AP seasoning. Dump the whole jar of Salsa Verde into the crockpot. The Trader Joe’s one is my absolute favorite, we buy 4 jars at once usually! Now all you have to do is cover and let the crockpot work its magic.
About halfway through, you will want to check on the meat and stir it. If it looks dry, feel free to add a cup of water and mix. Continue cooking until your timer is up! When the pork is ready, shred it up, get out your tacos and start filling them. Top with cotija cheese, lettuce and your favorite hot sauce. Enjoy!
Carnitas are extremely versatile. You can make quesadillas, nachos, enchiladas and tacos all from one recipe! Make a big batch and you will have a variety of delicious meals all week.
