Mahi Mahi Tacos
Taco Tuesday anyone? These mahi mahi tacos are light on calories and heavy on flavor. I made these because I was so sick of the typical beef or chicken tacos we were making every week. Sometimes in life we get stuck doing the same old same with the same old results. Supper should not be one of them. Take chances, try new flavors and just go with it.
AVOCADO CREAM SAUCE FOR MAHI MAHI TACOS
All right here’s the dish on the mahi mahi tacos. First thing, take your fish out of the fridge and unthaw according to package instructions. Now I like to make the cream sauce first. Cut open that avocado, hopefully it is just right inside, place in a bowl with sliced up jalapenos. Add in sour cream, sriracha, salt and pepper and lime juice. Mix it all together until it is smooth and pop it in the fridge to keep cool. We use the yellowbird blue agave sriracha on everything, you will notice it in a lot of my recipes. Next up, take the fish out of the fridge and pat them dry. Coat the fish with avocado oil and season both sides with black magic – go crazy, more flavor, the better! Place those fish fillets on the grill -flipping them over halfway through- until you have an internal temp of 145 degrees or 12-15 minutes at 350 degrees. If you are making these in the oven, cook at 350 degrees for 15-20 minutes. I also provided a link below for the Black Magic seasoning.
COLE SLAW FOR MAHI MAHI TACOS
While the fish is grilling you can whip up the slaw. Take out 3 cups of coleslaw into a separate bowl, add in cayenne, lime juice and salt and pepper. You can use more or less lime juice as you please. Set that aside until you’re ready to build those mahi mahi tacos. Go out and grab that fish off the grill and shred it up.
We prefer warm tortillas so I will heat them over my gas range and crisp them up a bit. Once those are done, I prepare the mahi mahi tacos. Place fish, cream and slaw on taco and top it off with feta cheese. If you have 2 hungry daughters like me, you may need to make this like a quesadilla. If that is the case, place fish on a tortilla, top with feta cheese and place another tortilla on top. Cook in pan on stove over medium heat until crisp. Top with slaw and serve it up to the kiddos. Left over cream? Grab some tortilla chips and dig in. I hope you enjoy these tacos as much as we do.
