Sheet Pan Fajitas
Our 2hungrydaughters love Mexican night in our house and these sheet pan fajitas are so easy to whip up. Pair them with chips and salsa and you’ve yourself a fiesta!
Colorful bell peppers, onions and chicken tossed with seasoning and sprinkled with lime juice. I can just taste the flavor bursting in my mouth. Sheet pan meals are so easy to make and even easier to clean up. They are usually healthier too and easy to swap ingredients, try these with shrimp or steak sometime. Looking for meatless Monday? Swap out the meat and add pre marinated tofu cubes!
INGREDIENTS
killer hogs ap rub
fajita seasoning mix
oil
lime
onion
green, red, yellow or orange bell peppers
chicken thighs or breasts
tortillas
THINGS ARE ABOUT TO GET SPICY!
Start by slicing your onion and peppers into 3 inch strips. Place into a medium sized bowl and add oil, AP rub and 1/2 the packet of the fajita seasoning mix. Set that aside until we are ready to mix it all together. Slice chicken into strips as well, toss with oil, AP rub and the rest of the fajita seasoning mix.
I like to let both the vegetables and chicken soak in the flavor for about 30 minutes in the fridge prior to cooking but if you are short on time, go ahead and grab a sheet pan and let’s whip this recipe together. You don’t have to put the chicken and vegetables into separate bowls if you are not placing them in the fridge.
Place chicken and vegetables on the sheet pan. Cut a lime in half and squeeze on top of everything. Pop it into the oven at 425 degrees for 20-30 minutes. The last few minutes, I used the broil option to crisp it up. Warm up your tortillas, grab some cheese and lettuce. It’s time to eat the sheet pan fajitas.
