Sheet Pan Sweet Potatoes with Sausage and Brussels Sprouts

This week all the fall feels are slowly creeping in. Which means, it is time for some comfort food. This roasted sheet pan sweet potatoes, sausage and brussels sprouts meal is a perfect new dinner idea for fall. It is so easy, healthy and tasty. Busy moms, you will love this one. The best part about this meal is that you can add / change all of the ingredients. Swap meat out for tofu or chick peas, throw in butternut squash instead of sweet potatoes, etc. The options are endless! Let’s get to cooking.

WHO’S EXCITED FOR A SHEET PAN MEAL IN MINUTES?

First, you will want to preheat your oven to 425 degrees. After that, start chopping up your sweet potatoes into 1 inch cubes. You will want to cut the brussels sprouts into two halves and the sausage into coins. Now you will spread everything out on the baking sheet and set aside. Grab a medium sized mixing bowl and whisk together the maple syrup, olive oil, salt, pepper and garlic. Once it is all mixed together, pour that over the everything on the sheet pan, making sure it is all coated. The final ingredient, sprinkle some brown sugar over all (about a tbsp.)

Time to pop that in the oven! Cook for 15 minutes, flip it over and cook another 15 minutes. For the last 3 minutes, I put my oven on broil, just to crisp it all up at the end. Keep an eye on it so it doesn’t burn! You can place this with a bed of rice or just gobble it up as is.
