Buffalo Chicken Salad

Buffalo Wings, but make it a salad. My most favorite buffalo chicken salad is here. This salad is delicious and full of goodness. An easy and great meal for lunch or a quick weeknight dinner. This buffalo chicken salad will cure your buffalo chicken cravings in a second. Not in the mood for a salad? Toss all the ingredients in a wrap and call it good!

INGREDIENTS

  • chicken

  • shredded carrot

  • celery

  • scallions

  • bleu cheese crumbles

  • greens; lettuce or spinach

  • ranch or bleu cheese dressing

  • buffalo sauce

MIX IT, MIX IT GOOD.

First off, lets talk about your choice of chicken. You can use shredded, baked, breaded, or whatever you want! Really the options are endless. I prefer the Perdue Simply Smart Organics breaded chicken breast strips. Toss them in the air fryer for about 15-20 minutes. While they cook, chop your celery and scallions. Get out your shredded carrot, bleu cheese crumbles, greens and salad dressing.

When the chicken is done, chop it up, place in a bowl and toss with your favorite buffalo sauce. Set that aside for a hot minute. In a large serving bowl, add your greens, carrots, celery and scallions; toss it all together. Now, add in your chicken and top with bleu cheese crumbles. 

Drizzle ranch or bleu cheese dressing over the top and enjoy! Side note, you may need a larger bowl if your husband is anything like mine and likes to eat right out of it. Anyways, this is a seriously delicious dinner that is ready in minutes. YUM! I can guarantee you will want this buffalo chicken salad for more than just one meal.
