This 7 layer salad reminds me of summer and being at the lake. It seemed to always work its way into one of our weekend meals whenever we were up at our lake cabin. This retro salad pairs great with anything grilled and will always bring a smile across your face. This layered salad is easy and versatile, you can make it your own way with any substitution.

INGREDIENTS

  • lettuce

  • cauliflower

  • broccoli

  • carrots

  • tomatoes

  • cucumbers

  • bacon

  • mayo

  • sugar

  • cheddar cheese

MIX IT, MIX IT GOOD.

First, choose your bowl. You can use a large glass bowl like I did, to see all of the layers or a 9×13 glass baking dish or foil pan for easy potluck clean up! Pop the bacon in the oven at 350 for 30 minutes or fry it on the stove. While the bacon is cooking chop all of your veggies. Whisk together your dressing and lets build our 7 layer salad! First, place the lettuce at the bottom. When you do your layers, try to mix the colors so green doesn’t over lap green. You want this salad to be bright and bold.

When  you are doing the layers, it is best to start on the outside closed to the glass or edge of the baking dish and then fill in the center. Next layer on, carrots, broccoli, cauliflower, tomatoes and cucumbers. Pour the dressing on and spread to cover top of salad. Sprinkle on shredded cheese and bacon. That’s it! Voila, a beautiful bright and delicious 7 layer salad. 

The best part of this salad is that it can be made ahead of time and placed in the refrigerator over night, just cover with saran wrap. You could add sliced hard boiled eggs, peas or even onions. Whatever you decide, think color because that is what this salad is all about!
