Bruchetta
This easy Bruschetta recipe is a go-to appetizer for almost any occasion that will leave everyone satisfied and coming back for more. Does anyone else love when you sauté garlic and oil? I could just bottle that smell up. This bruschetta has so many bold flavors from the tomatoes and herbs and it is topped onto warm, golden French bread. It is the perfect appetizer to bring to any kind of party.
INGREDIENTS
avocado oil (or virgin olive oil)
minced, fresh garlic
roma tomatoes, diced
finely shredded parmesan cheese
Monari Federzoni Glaze with Balsamic Vinegar of Modena (bought at Target)
salt & pepper
basil ribbons
French bread, sliced into 12 pieces
LET’S MAKE THE BRUSCHETTA
First off, heat oil in a small skillet or sauce pan over medium-low heat. Add in your garlic and sauté until it just becomes golden. You don’t want to brown it. Wonderful smell provided now Pour into a larger mixing bowl and set it aside to let it cool. Next up, grab out a cutting board and chop your tomatoes and basil. If you don’t know how to cut your basil into ribbons. This video will help.

Now that all of your chopping is done, it is time to mix it all together! Pour tomatoes, parmesan, basil, balsamic, salt and pepper into the mixing bowl with the garlic and oil. Toss everything together until it is incorporated and set aside. Lastly, lets toast our bread! This can be tricky as the bread can crisp and burn rather quickly. Turn on the broil button on your oven and place your wire rack just below it. Yes, I want the bread to just almost touch the broiler. On a large baking sheet, place all of your bread slices on it. Place in the oven for 1 minute (keeping a watchful eye) until they are golden brown and then flip to the other side to repeat. Once both sides are toasted, take the bread out and place on a serving dish.
YOU HAD ME AT BRUSCHETTA
Time to enjoy this delicious appetizer. You can place the tomato mixture into a cute little bowl with the bread on a platter. Have your guests spread the mixture onto their piece of bread for the best taste. I highly suggest eating this right away when everything is warm.
