Grandma’s Scratch Pancakes

Breakfast is our favorite meal

I am SO excited to share this recipe with you all. It is my husbands family recipe that has been made for many years. These light and fluffy scratch pancakes come together with only a few simple ingredients. Pancakes are one of the most delicious breakfast treats, topped with butter, a drizzle of syrup and fresh fruit. Are you drooling yet? Lets make them!

INGREDIENTS

  • flour

  • buttermilk

  • oil

  • baking power

  • sugar

  • salt

  • eggs

  • syrup, butter, fruit - for topping

Light & Fluffy Pancakes

In a large mixing bowl, combine flour, baking powder, sugar and salt. Mix together and make a dome, stir in buttermilk, oil and eggs. Combine everything together and set aside.

Heat a nonstick skillet to medium heat. If you do not have a very good nonstick skillet, you can add a little oil to prevent the pancakes from stick.

Now, lets make some pancakes. You can either use my handy dandy pancake tool (linked below) or grab out a 1/4 cup measuring cup and use to pour the batter onto the skillet. Scoop or dump batter into skillet, you can make the pancakes any size you would like. Flip them over once they begin to bubble and the edges are golden. Let cook for another minute on the other size, and take off and place on side plate.

Repeat these steps with remaining batter. We like to add in mini chocolate chips as well as blueberries. To keep them warm while you continue cooking the remaining batter, place a towel over top. Serve them with butter, syrup, fresh fruit, crispy bacon or sausage links; you really can’t go wrong!

If you’re cooking for a crowd, you can double this recipe.

If you have leftovers, simply store in the fridge and reheat as needed. We like to pop ours in the toaster! You can also freeze these delicious pancakes and eat them within 2 months.
