  • butter

  • sugar

  • eggs

  • vanilla extract

  • pistachio pudding mix

  • baking powder

  • salt

  • milk

  • flour

  • pistachio kernels; crushed into bits

  • muffin tin

Pistachio Muffins

Flavorful and fun, these green muffins are effortless to make and the real pistachios jazz them up for an extra crunch. Let’s get started. First, lets make a side note — we are going to cook these muffins at a higher heat initially to activate the baking powder right away, which gives the muffins a nice tall dome top.

Preheat your oven to 425 degrees and line your muffin tins with liners. In a large bowl, use a hand mixer to beat together the butter with sugar. Add in eggs and vanilla extract. Mix until combined. Next, you will add in the pistachio pudding mix, baking powder, salt and milk. Mix until everything is combined. Add in flour until all incorporated. Lastly, add in about 1/4 cup of crushed pistachio kernels, this gives your muffins the perfect bit of crunch. Save some of these so we can add it to the top of the muffins.

Divide the batter amongst your muffin cups and sprinkle pistachio bits on top. Bake in the preheated 425 degrees for 8 minutes, then reduce heat to 350 degrees and bake for another 10 minutes.

Once the muffins are done, remove from the muffin tin and let cool on a wire rack.
