These soft and chewy, healthy banana bread breakfast cookies are a dream come true. These breakfast cookies are wholesome and packed with superfoods. They make the perfect grab-and-go morning snack and yes YOU CAN eat cookies for breakfast and feel good about it.

  • old fashioned oats

  • flour

  • sugar

  • baking powder

  • cinnamon

  • vanilla oatmilk

  • flax egg

  • vanilla extract

  • banana

  • chopped walnuts

These banana bread breakfast cookies are soft yet hearty and an incredibly forgiving recipe that you can easily customize to your liking. Lets get started. First off, preheat your oven to 350 degrees and line a baking sheet with parchment paper. The easy fix to no extra dishes! In a medium sized mixing bowl, add all of the dry ingredients and stir together, make a well in the middle and set aside. In a smaller mixing bowl, combine all wet ingredients, mix together and pour into the middle of the dry ingredients.

Next, add in your walnuts and mix everything together until it is all combined. Take your ice cream scoop or a 1/4 cup measuring cup and scoop out batter and place onto parchment paper. Lightly press down to flatten the cookies. Pop them in the oven and bake for 15-17 minutes, let cool before eating and enjoy!
