Creamy Spinach and Chicken Fettuccine Alfredo

Whoa, that’s a mouthful but talk about delicious. This creamy spinach and chicken fettuccine is my secret weapon for busy weeknights or a lazy weekend. With a creamy Alfredo inspired sauce, you’re sure to be asking for seconds. Italian food is probably our second favorite, you know we love Mexican food. 

This creamy spinach and chicken fettuccine is more Americanized with its use of heavy cream to make the Alfredo sauce. This pasta is so versatile you can swap or change the ingredients to cater to your families favorites. Examples? Swap the protein or add more vegetables. Kids don’t like green noodles? Change the pasta. So many options, let’s get started.

INGREDIENTS

  • oil

  • garlic

  • butter

  • heavy cream

  • pepper

  • salt

  • habanero seasoning

  • crushed red pepper flakes

  • parmesan

  • spinach fettuccine noodles

  • chicken breast (cubed)

THE PERFECT WEEKNIGHT FAMILY MEAL.

First up, cook your pasta in salty water until al dente. Drain and set aside, on the stove. While your pasta is cooking, you can cook your chicken breast however you prefer; oven, air fryer or on the stove. When it is done, cube it and set it aside. Now, let’s whisk together a quick Alfredo inspired sauce. In the sauce pan you prefer; you will want to use a large sauce pan so we can add in the noodles and chicken at the end. Back to that sauce pan, add oil, butter and garlic and sauté until fragrant, about 2 minutes.

Slowly add in the heavy cream, habanero seasoning and red pepper flakes, whisking everything together until it comes to a simmer. Now add in your parmesan cheese, wait until it melts and the sauce thickens, about 6 minutes. Next, stir in your cooked chicken (cubed), salt and pepper. When you’re ready, add in your pasta and bring everything together. If the sauce seems too thick, you can add a little water to it.
