Grandma’s Swedish Meatballs
Swedish meatballs, thank you Grandma!! This recipe has been in our family for years. Whenever we get together up north at my parents house, we request my grandma to come over and make her infamous meatballs and she ALWAYS follows through.
Chicken Enchiladas
These chicken enchiladas are simple and delicious and the perfect meal for the family. From start to finish, you will be eating enchiladas in less than an hour! When the option of going out to eat comes up in our family the top choice is always – Mexican. Who doesn’t love chips, queso, salsa, tacos and enchiladas; not in that order of course. Oh, what about chimichangas — major heart eyes, yum! You just can’t go wrong with any of it.
White Chicken Chili
This slow cooker white chicken chili is the ultimate comfort food and perfect for a cool fall night and Monday Night Football. Remember when I mentioned I wasn’t a huge fan of soup but really fell in love with my tortellini soup? Well, here we go again. I have never liked chili but this recipe, holy smokes. This chili is so smooth, creamy and delicious.
Pizza Roll Ups
Pizza pizza pizza, everyone’s favorite! These Pizza Roll ups are stuffed with gooey mozzarella cheese and pepperonis, perfect for a snack, lunch or appetizer. This recipe is quick and easy but leftovers are never guaranteed when I make these. If you love pizza as much as we do, you could also try my pizza hotdish.
Tortellini Soup
This may be coming out of left field but let me tell you, that I don’t really like soup. I find the consistency to be very weird and I have struggled with finding what I love. It also makes me really warm, even if it is negative 10 degrees outside. BUT I don’t want my 2hungrydaughters to be picky so I decided I need to find a soup we can all enjoy. What soup is at the top of my list you ask? Cheddar potato! As well as noodles and broth (not a fan of chicken in soup). I decided to try some recipes for fall and this tortellini soup is a GAME CHANGER. Pasta + soup mixed together for one fabulous meal?? Hook, line and sinker.
Chicken Pot Pie Casserole
First off, I have yet to master the art of making a pie crust. So when I made this recipe, I decided to make it easy and change it up a bit from a regular chicken pot pie. I give you chicken pot pie casserole with biscuits on top! Talk about delicious. There is nothing I love more than a home cooked meal and this just screams comfort food. This recipe is so easy for those busy nights. I have a friend whose husband could devour this whole dish in one setting, that is how good it is! Hope you’re hungry.

A new way to make your favorite delivery at home! We are big pizza lovers and this pizza hotdish is so simple to make and something the whole family is sure to enjoy. It has big pizza flavor and the best part? It’s made right at home! Just like with any other pizza, you can add whatever topping you want, olives, peppers, etc. I am going to stick to the basics because that is what my 2hungrydaughters love.
Mahi Mahi Tacos
Taco Tuesday anyone? These mahi mahi tacos are light on calories and heavy on flavor. I made these because I was so sick of the typical beef or chicken tacos we were making every week. Sometimes in life we get stuck doing the same old same with the same old results. Supper should not be one of them. Take chances, try new flavors and just go with it.
Barbecue Grilled Chicken served with Cauliflower Mashed Potatoes
We had friends stop by for a pit stop this past weekend and I wanted to fill their bellies with a whole sum meal as well as a little love. What better way than with barbeque grilled chicken and mashed potatoes. I love mashed potatoes just as much as anyone else. But with this recipe I decided to limit the starch and make a healthier option with cauliflower, which is lighter and tastier. For the chicken all we did was baste with some BBQ sauce and grilled it on the Green Egg until it was charred, crisp and the BBQ sauce was caramelized. Talk about flavorful and juicy 🙂
