The details….
This recipe requires you to marinate your chicken for 2-3 hours prior to grilling. Promise us when we tell you that marinated chicken is worth the wait and makes chicken shawarma shine. Lets get started. First up, place chicken thighs or breasts into a large zip-lock bag along with Greek yogurt, lemon juice and shawarma seasoning. Rub everything together and place into the fridge for 2-3 hours. The longer the better. While it is marinating you can whip up the garlic sauce. In a medium mixing bowl add mayo, sour, cream, Greek yogurt, lemon juice, garlic, salt and pepper and mix together. Set it in the fridge until you’re ready to eat.
After the chicken is done marinating, fire up the grill. Place chicken on the grill, flipping regularly and cook until you reach an internal temperature of 165 degrees. About 20-30 minutes. Once it is done, chop the chicken into cubes. You can either grill your pita or warm it up in the oven prior to filling it up with goodness. Lay pita on a flat surface. Add garlic sauce, chicken, onion, lettuce and tomatoes. Drizzle on a little bit more garlic sauce, fold over pita and enjoy!
This chicken shawarma is one of my husbands favorite recipes. We serve this as a deconstructed pita to our girls, aka - chicken, pita and rice on a plate. My youngest loves the garlic sauce. If you aren’t in the mood to grill, throw the chicken on a baking sheet and cook in the oven for 20-30 minutes at 400 degrees or until the chicken reaches an internal temperature of 165 degrees.
